Kare Kare :)
Kare kare is one of Filipino traditional stew cooked with a thick peanut sauce. You can use different meat on this dish such as ox tail, beef, pork leg or even chicken. Aside from it's thick peanut sauce, the taste of this dish depends on the shrimp paste (bagoong) which can be cooked separately or simply mixed on the dish.
Ingredients:
Pork leg / beef and ox tail (depends on your choice)
Peanut butter
Ground peanut
Garlic
Onion
Pork / beef broth cubes
Pechay
String beans
Eggplant
Banana flower
Shrimp Paste
Water
Salt
Pepper
Cooking Procedure:
1) In a pot, simmer the meat until it is tender.
2) Once the meat is tender, discard the excess water. Saute the garlic and onion, add the meat, ground peanut, peanut butter, water and broth cube. Simmer for 10 minutes.
3) Add the eggplant, banana flower, string beans and pechay. Let it cook for 3-5 minutes.
4) Add salt and pepper to taste.
5) Serve with shrimp paste. Enjoy! :)
